  • 2 medium globe eggplants
  • 1 tsp kosher salt, plus more to taste
  • 1/4 cup neutral oil, approximately
  • 1 1/2 cups walnut halves
  • 2 garlic cloves
  • 1 tsp ground coriander
  • 1/2 tsp ground blue fenugreek
  • 1/4 tsp cayenne or red chile powder
  • 3 tbsp white wine vinegar, plus more to taste
  • 1/4 cup water, approximately
  • 1/3 cup chopped cilantro
  • Pomegranate seeds, for garnish

Method

  1. 1.Slice eggplants lengthwise about 1/4 inch thick. Sprinkle lightly with salt and rest 20 minutes, then blot dry.
  2. 2.Heat a thin layer of oil in a wide skillet over medium heat. Cook eggplant slices in batches until soft and golden on both sides, adding small amounts of oil as needed. Drain on towels or a rack.
  3. 3.Pulse walnuts, garlic, coriander, blue fenugreek, chile and a pinch of salt until very finely ground.
  4. 4.Add vinegar and enough water to make a thick, spreadable walnut mixture. Fold in cilantro.
  5. 5.Checkpoint: the filling should hold its shape on a spoon but spread without tearing the eggplant. Adjust with water by teaspoons if too stiff.
  6. 6.Spread about 1 tablespoon filling across each cooled eggplant slice and either fold in half or roll loosely.
  7. 7.Arrange on a platter and garnish with pomegranate seeds. Rest at least 20 minutes before serving so walnut, garlic and vinegar meld.
