  • 2 lb green cabbage, cored and chopped
  • 2 cups walnut halves
  • 3 garlic cloves
  • 1 tsp ground coriander
  • 1/2 tsp ground blue fenugreek
  • 1/2 tsp mild red pepper or paprika
  • 1 small onion, minced very finely
  • 3 to 4 tbsp white wine vinegar, plus more to taste
  • 1 tsp kosher salt, plus more to taste
  • Pomegranate seeds, for garnish
  • Cilantro leaves, optional garnish

Method

  1. 1.Bring a large pot of salted water to a boil. Add cabbage and cook 18–22 minutes until fully tender.
  2. 2.Drain cabbage thoroughly and cool until safe to handle. Squeeze handfuls firmly to remove as much water as possible. Checkpoint: squeezed cabbage should feel damp but should not drip when pressed.
  3. 3.Chop the cabbage very finely and place in a large bowl.
  4. 4.Pulse walnuts, garlic, coriander, blue fenugreek, red pepper and salt in a food processor until finely ground but not turned into oily nut butter.
  5. 5.Mix walnut seasoning with onion and 3 tablespoons vinegar.
  6. 6.Work the walnut mixture into the cabbage with clean hands or a sturdy spoon until evenly distributed. Checkpoint: the mixture should hold together when pressed into a small mound.
