Puerto Rican Sofrito
A fresh aromatic seasoning base of peppers, onion, garlic and herbs used throughout Puerto Rican cooking.
This is a practical home-kitchen version intended to support the recipes in the Fringe Table collection. Household and regional versions vary, so treat the quantities as a useful starting point rather than a claim to one definitive formula.

- 1 green bell pepper, chopped
- 1 cubanelle or mild frying pepper, chopped
- 1 medium onion, chopped
- 8 garlic cloves
- 1 packed cup cilantro
- 1/2 cup culantro leaves, if available
- 2 tbsp olive oil
- 1/2 tsp salt
Method
- 1. Add the peppers, onion, garlic, cilantro and culantro to a food processor.
- 2. Pulse until finely chopped but not completely liquefied, scraping the bowl as needed.
- 3. Pulse in the olive oil and salt. Refrigerate for several days or freeze in small portions for longer storage.
