Newari Chatamari

That source is useful because it keeps the dish rooted in Newar food culture while also acknowledging its wider popularity in Nepal. This version uses a thin meat-and-egg topping inspired by documented Kathmandu Valley practice while keeping the rice base crisp at the edges and tender through the center.
Why this dish matters
Chatamari is sometimes marketed as 'Nepali pizza,' but that nickname can hide the technique that actually defines it. The base is a rice-flour batter, not a risen wheat dough, and the covered-pan method cooks the top with trapped steam while the bottom sets against a hot iron surface. Newari versions range from plain to topped with egg, minced meat, vegetables or cheese. Rather than treating one topping combination as definitive, this recipe presents meat and egg as one documented branch of a larger Newar preparation.
Do not substitute wheat flour one-for-one for rice flour; it changes both the structure and identity of the base. Buffalo meat is used in many Newari meat preparations, but ground beef is a practical home substitute where buffalo is unavailable and is labeled as such here. A plain chatamari without meat or egg is also fully legitimate and is the form documented in the Nepal Tourism Board base recipe.
Preparation notes
The batter should spread under gentle wrist movement but not run like water. Resting it briefly hydrates the rice flour and reduces cracking.
Raw meat must be spread in a very thin layer so it cooks safely in the few minutes the base spends under the lid.
Too much heat scorches the rice base before the steam can set the topping; too little leaves the base pale and rubbery.

Ingredients
- 2 cups fine white rice flour
- 1 3/4 to 2 cups warm water
- 1/2 tsp kosher salt
- Neutral oil or mustard oil, for greasing the pan
- 10 oz ground buffalo or ground beef as a practical substitute
- 1/3 cup finely minced red onion
- 2 scallions, finely sliced
- 1 tsp grated fresh ginger
- 2 garlic cloves, finely grated
- 1/2 tsp ground cumin
- 1/2 tsp ground coriander
- 1 small green chile, finely minced
- 3/4 tsp kosher salt, for the topping
- 2 tbsp chopped cilantro
- 3 large eggs, lightly beaten, or 6 small eggs for one per chatamari
- Tomato or achar-style chile pickle, for serving, optional
Method
- 1.Whisk rice flour and 1/2 teaspoon salt with 1 3/4 cups warm water until completely smooth. Let the batter rest 15 minutes, then whisk again and add enough remaining water to reach a consistency slightly thinner than pancake batter.
- 2.Checkpoint: lift the whisk. The batter should fall in a steady ribbon and disappear back into the bowl within a few seconds without leaving lumps.
- 3.Mix the ground meat with onion, scallion, ginger, garlic, cumin, coriander, chile, 3/4 teaspoon salt and cilantro. Keep the mixture chilled until the pan is ready.
- 4.Heat a well-seasoned cast-iron or nonstick skillet over medium-high heat, then wipe with a very thin film of oil. A drop of batter should sizzle gently on contact rather than blacken.
- 5.Pour about 1/3 cup batter into the center and immediately tilt or spread it into a thin 7-inch circle. Lower the heat to medium.
- 6.For a meat version, scatter a very thin layer of seasoned meat over the still-wet surface, leaving a narrow border. Spoon a little beaten egg over the meat, or crack one small egg into the center.
- 7.Cover tightly and cook 4 to 6 minutes. Do not flip unless the topping is unusually thick. The lid traps the steam needed to cook the upper surface.
- 8.Checkpoint: the rice base should release from the pan at the edges and show light golden patches underneath; the egg white should be fully opaque; and ground meat must reach at least 160°F in several spots.
- 9.Uncover and cook 30 to 60 seconds more if you want a crisper edge. Slide the chatamari onto a plate rather than folding it while hot.
- 10.Repeat with the remaining batter, wiping the pan lightly with oil between rounds and adjusting heat as needed. Serve immediately with achar or a curry-based meat or vegetable accompaniment.
