About this dish
Dal bhat is better understood as a meal pattern than a single fixed recipe: bhat is cooked rice, dal is a pourable lentil preparation, and the plate commonly expands with tarkari, greens and achar. Across Nepal, dal bhat reflects geography, season and household preference. Rice is common where it grows readily, while other grains can appear at higher elevations. There is no single national household formula for dal bhat. This version gives a practical rice-and-red-lentil foundation and encourages seasonal tarkari and achar alongside.

Ingredients & detailed method
Ingredients
- 1 1/2 cups basmati or other long-grain rice
- 2 1/4 cups water for the rice
- 1 cup red or yellow split lentils
- 4 1/2 cups water for the dal
- 1/2 tsp turmeric
- 1 tsp kosher salt, divided, plus more to taste
- 1 tbsp ghee or mustard oil
- 1 tsp cumin seeds
- 2 garlic cloves, thinly sliced
- 1 dried red chile, optional
- 1/2 tsp jimbu, optional
- Chopped cilantro, for serving
- Seasonal vegetable tarkari and achar, for serving
Method
- 1.Rinse rice until the water runs mostly clear, then drain. Combine with 2 1/4 cups water and a pinch of salt.
- 2.Bring rice to a boil, cover, reduce heat to very low and cook 13–15 minutes. Turn off heat and rest covered 10 minutes before fluffing.
- 3.Rinse lentils well. Combine with 4 1/2 cups water, turmeric and 1/2 teaspoon salt. Bring to a boil, skim foam if needed, then reduce to a steady simmer.
- 4.Cook lentils 25–30 minutes until very soft. Checkpoint: individual lentils should collapse easily when pressed, while the dal remains loose enough to pour over rice.
- 5.Adjust dal with hot water if it becomes too thick; season with additional salt.
- 6.Heat ghee or mustard oil in a small pan. Add cumin and dried chile; when cumin sizzles, add garlic and jimbu if using. Cook just until the garlic turns pale gold.
- 7.Immediately pour the hot tempering into the dal. Checkpoint: it should hiss strongly and release a toasted, aromatic smell. Stir once and taste.
- 8.Serve rice with dal alongside or poured over it, plus seasonal tarkari, achar and greens if available.
