About this dish

Legim is a Haitian vegetable stew whose identity comes from cooking several vegetables until tender and partially mashing them into a thick, unified mixture. Eggplant, cabbage, chayote and leafy greens are common, while beef, crab or other proteins may be included. Epis supplies the aromatic foundation.

Ingredients

  • 1 1/2 lb beef chuck, cubed
  • 1/2 cup Haitian epis
  • 2 tbsp lime juice
  • 1 small eggplant, cubed
  • 1/2 green cabbage, chopped
  • 1 chayote, peeled and cubed
  • 2 carrots, sliced
  • 3 cups spinach or watercress
  • 2 tbsp tomato paste
  • 4 cups water or stock
  • 1 tsp salt, plus more to taste
  • 1 tbsp neutral oil

Method

  1. 1.Marinate beef with half the epis, lime juice and salt for at least 30 minutes.
  2. 2.Brown beef in oil, add tomato paste and remaining epis, then add water or stock and simmer 45 minutes.
  3. 3.Add eggplant, cabbage, chayote and carrots; cover and simmer 30–40 minutes until extremely tender.
  4. 4.Add greens for the final 5 minutes.
  5. 5.Remove beef pieces temporarily and mash vegetables with a potato masher.
  6. 6.Checkpoint: the stew should be thick enough to mound on a spoon while still showing vegetable texture.
  7. 7.Return beef, simmer 10 minutes and adjust salt before serving with rice.
