Follow the rice and seasoning
Rice is a useful thread through this section of the collection, but the surrounding methods matter: Haitian rice and beans draws flavor from beans, herbs, epis and sometimes coconut milk, while Gullah red rice develops its identity through tomato, aromatics and Lowcountry technique. Epis is similarly not a universal Caribbean seasoning but a distinctly Haitian building block.
