Ingredients
- 1 lb okra, sliced
- 1 onion
- 2 garlic cloves
- 3 tomatoes, chopped
- 6 oz smoked turkey or ham
- 6 cups stock
- 1/2 cup long-grain rice
- 1 tsp thyme
- Black pepper
- Salt to taste
Method
- 1.Brown smoked meat lightly in a soup pot.
- 2.Add onion and garlic; soften.
- 3.Add tomatoes and cook until broken down.
- 4.Add stock, thyme and okra; simmer 20 minutes.
- 5.Add rice and simmer 18–20 minutes.
- 6.Checkpoint: okra should be tender and broth lightly thickened while rice remains distinct.
- 7.Adjust seasoning and serve hot.
