A fiery Sri Lankan onion-and-chile relish traditionally served in small amounts beside mild starches such as kiribath.

  • 1 small red onion, very finely chopped
  • 1 tbsp red chile flakes
  • 1/2 tsp coarse salt
  • 1 tbsp fresh lime juice
  • 1 tbsp finely crushed dried fish or Maldive fish, optional

Method

  1. 1. Pound or firmly mix the onion, chile and salt until the onion softens and releases some juice.
  2. 2. Add lime juice and dried fish if using. Mix until the relish becomes moist and cohesive.
  3. 3. Taste and adjust salt or lime. Serve in small amounts; the relish should be hot, salty and bright.
