Sri Lankan Lunu Miris
A fiery Sri Lankan onion-and-chile relish traditionally served in small amounts beside mild starches such as kiribath.
This is a practical home-kitchen version intended to support the recipes in the Fringe Table collection. Household and regional versions vary, so treat the quantities as a useful starting point rather than a claim to one definitive formula.

Ingredients
- 1 small red onion, very finely chopped
- 1 tbsp red chile flakes
- 1/2 tsp coarse salt
- 1 tbsp fresh lime juice
- 1 tbsp finely crushed dried fish or Maldive fish, optional
Method
- 1. Pound or firmly mix the onion, chile and salt until the onion softens and releases some juice.
- 2. Add lime juice and dried fish if using. Mix until the relish becomes moist and cohesive.
- 3. Taste and adjust salt or lime. Serve in small amounts; the relish should be hot, salty and bright.
