A useful starting path

If you are new to Ethiopian cooking, begin with Shiro Wot because it teaches the flavor relationship between onions, berbere and stew texture with relatively accessible ingredients. Then try Doro Wat to learn the longer onion-reduction technique and the role of niter kibbeh. Serve either with injera.
