About this dish

Tikil gomen is an Ethiopian cabbage preparation commonly cooked with carrots and potatoes. Unlike berbere-heavy wots, it is usually mild, with turmeric giving the vegetables a warm yellow color and onion, garlic and ginger supplying depth. The finished vegetables should be thoroughly tender without dissolving into mash.

Ingredients

  • 3 tbsp olive or neutral oil
  • 1 large onion, sliced
  • 3 garlic cloves, minced
  • 1 tbsp grated ginger
  • 1/2 tsp turmeric
  • 3 medium carrots, cut into 1/2-inch pieces
  • 3 medium waxy potatoes, cut into 3/4-inch cubes
  • 1 small green cabbage, cored and cut into 1-inch pieces
  • 1/2 cup water
  • 1 tsp kosher salt, plus more to taste
  • 1 jalapeño, sliced, optional

Method

  1. 1.Heat oil in a wide covered pot over medium heat. Add onion and cook 6–8 minutes until soft and lightly golden.
  2. 2.Add garlic, ginger and turmeric and stir 30 seconds until fragrant.
  3. 3.Add carrots and potatoes, toss in the seasoned oil and cook 4 minutes.
  4. 4.Add water and salt, cover and reduce heat to medium-low. Cook 10 minutes.
  5. 5.Add cabbage and jalapeño if using, folding gently so the cabbage contacts the hot pot. Cover again and cook 12–15 minutes.
  6. 6.Checkpoint: potatoes should be tender when pierced, carrots should retain a little structure and cabbage should be soft without turning to puree.
  7. 7.Uncover and cook 2–3 minutes if free liquid remains. Taste for salt and serve warm with injera and other Ethiopian dishes.
