Ingredients

  • 1 1/2 cups dried green or brown lentils, rinsed
  • 5 cups water
  • 1/2 small red onion, minced
  • 1 jalapeño, seeded and minced
  • 3 tbsp fresh lemon juice
  • 3 tbsp extra-virgin olive oil
  • 2 tsp ground mustard
  • 1/2 tsp kosher salt, plus more to taste
  • 2 tbsp chopped parsley, optional

Method

  1. 1.Combine lentils and water in a saucepan, bring to a boil and simmer uncovered 20–30 minutes.
  2. 2.Checkpoint: lentils should be tender at the center but retain distinct skins and shapes. Drain thoroughly.
  3. 3.Whisk lemon juice, olive oil, mustard and salt in a serving bowl.
  4. 4.Add warm lentils and toss. Let cool 10 minutes.
  5. 5.Fold in red onion, jalapeño and parsley if using. Lightly mash 1/4 cup lentils against the bowl if you want a slightly creamier dressing.
  6. 6.Chill 20–30 minutes or serve at room temperature.
  7. 7.Taste again for lemon, mustard and salt before serving with injera or as part of a larger Ethiopian spread.
