Eritrean Alicha Birsen
Lentils simmer with turmeric and aromatics into a mild, golden stew meant to share an injera platter with spicier dishes.

About this dish
Alicha preparations in Eritrean and Ethiopian cooking are generally milder than berbere-driven wots, often using turmeric, onion, garlic and ginger. Birsen refers to lentils, making this a gentle lentil stew with a soft, spoonable consistency.
Why this dish matters
Alicha-style stews show how Horn of Africa meals balance heat across the table rather than making every dish fiery. Lentil versions are particularly useful on fasting or meatless spreads.
Terminology and lentil choice vary across Eritrean households; this is a practical mild version.
Preparation notes
Excess starch can make the pot pasty.
They build sweetness without chile.
The stew should be creamy but still spoonable.
