Circassian chicken—known in Turkish as Çerkez tavuğu—pairs poached chicken with a sauce of walnuts, bread, garlic and broth. The sauce should feel creamy without cream: finely ground walnuts provide richness while bread gives the mixture body.
The dish is commonly served cool or at room temperature, which makes the final resting period part of the method rather than an afterthought.

Türkiye's Ministry of Culture and Tourism identifies chicken with walnut sauce as characteristic of Circassian cooking and notes that the dish became known in many parts of Türkiye, particularly as a special-occasion appetizer or meze. The ministry also records older finishing practices using walnut oil pressed from the nuts.
Historical accounts of Ottoman-era cuisine show how Circassian foods moved through imperial kitchens and across the Eastern Mediterranean. That wider adoption should not erase the dish's Circassian identity; it helps explain why several neighboring cuisines have closely related walnut sauces.
Regional versions may use different breads, spice levels or finishing oils. This recipe is a home-kitchen interpretation of the classic walnut-sauce structure.
Preparation notes
Hard boiling tightens chicken and clouds the broth. A bare simmer gives tender meat and a cleaner liquid for the sauce.
The texture should be more like a thick cream than chopped nut relish. Stop before the walnuts turn into oily nut butter.
The sauce thickens as it stands. Add broth in small amounts so it stays spoonable without becoming runny.

- 2 lb boneless chicken thighs or breasts
- 4 cups light chicken stock or water
- 1 small onion, halved
- 2 cups walnuts
- 2 slices day-old white bread, crusts removed
- 2 garlic cloves
- 1 tsp paprika
- 1/2 tsp ground coriander
- Kosher salt and black pepper
- 1 tbsp walnut oil or paprika-infused oil, optional
Method
- 1.Poach the chicken. Put chicken, onion and stock in a saucepan. Bring just to a simmer, then lower the heat so the liquid barely moves.
- 2.Cook gently. Poach 15–20 minutes depending on the cut. Checkpoint: the thickest piece should reach 165°F and remain juicy when cut.
- 3.Reserve broth. Transfer chicken to a plate and strain the liquid. Keep at least 2 cups warm for the sauce.
- 4.Shred. When cool enough to handle, pull the chicken into fine bite-size strands rather than chopping it into cubes.
- 5.Start the walnut base. Pulse walnuts, bread, garlic, paprika, coriander, salt and pepper until very finely ground.
- 6.Add broth gradually. With the processor running or while stirring vigorously, add warm broth 1/4 cup at a time. Checkpoint: the sauce should become smooth, thick and spoonable, similar to loose hummus.
- 7.Coat the chicken. Fold about two-thirds of the sauce through the shredded chicken. If it feels dry or pasty, add a spoonful of broth.
- 8.Rest. Let the dressed chicken stand 15–20 minutes. The walnut and bread mixture will absorb more liquid.
- 9.Recheck consistency. Checkpoint: the chicken should stay moist and coated, not sit in a puddle and not clump dryly. Loosen with broth if needed.
- 10.Serve. Spread onto a platter, spoon remaining sauce over and drizzle with walnut oil or paprika oil if using. Serve cool or at room temperature.
