Shan noodles, or Shan khauk swè, come from Shan State in eastern Myanmar and are now eaten widely beyond the region. A common dry style coats rice noodles with a tomato-based chicken or pork sauce and finishes the bowl with peanuts, herbs, chile and pickled mustard greens; broth may be served alongside.

  • 12 oz medium rice noodles
  • 1 lb ground or finely chopped chicken thigh
  • 2 tbsp neutral oil
  • 4 garlic cloves, minced
  • 1 tbsp grated ginger
  • 3 medium ripe tomatoes, finely chopped
  • 1 tbsp fish sauce
  • 1 tbsp light soy sauce
  • 1 tsp paprika or mild chile powder
  • 1/2 cup chicken stock or water
  • 1/2 cup roasted peanuts, crushed
  • 1/2 cup chopped pickled mustard greens
  • 3 scallions, thinly sliced
  • 1/2 cup cilantro leaves
  • Garlic oil or crisp fried garlic, for serving
  • Chile oil, for serving
  • Lime wedges, optional

Method

  1. 1.Prepare all toppings before cooking the noodles so the finished bowls can be assembled immediately.
  2. 2.Heat oil in a skillet over medium heat. Add garlic and ginger and cook 30 seconds until fragrant.
  3. 3.Add chicken and cook 4–5 minutes, breaking it into small pieces until no raw color remains.
  4. 4.Add tomatoes, fish sauce, soy sauce and paprika. Cook 10–12 minutes, stirring often. Checkpoint: tomatoes should collapse into a thick, glossy sauce that clings to the chicken.
  5. 5.Add stock and simmer 5 minutes. The sauce should be loose enough to coat noodles but not soupy.
  6. 6.Cook rice noodles according to package directions until tender but resilient. Drain thoroughly.
