Devzira is valued for the way it absorbs flavor while staying distinct. When it is unavailable, choose rice that can handle layered cooking without becoming mushy.

Best practical options

Long-grain parboiled rice: forgiving and good at staying separate, though its aroma and grain character differ from devzira.

Basmati: accessible and aromatic, but lighter and more slender. Rinse thoroughly, soak briefly, and watch cooking time because it can soften faster.

Medium-grain rice: can work if carefully rinsed and managed, but tends to become stickier and is less forgiving.

Technique matters as much as variety
