Ingredients for the Indigenous Americas Recipes on Fringe Table

This is not a universal Indigenous pantry. It covers only the ingredients needed for the Cherokee and Hopi-focused pages currently in the collection.

Core ingredients

Fine cornmeal

Useful for Cherokee bean bread; texture matters more than brand.

Very fine blue cornmeal

Used in the piki-inspired home adaptation. Choose food-grade meal intended for cooking.

Cooked beans

Pinto or brown beans work in the bean-bread adaptation, ideally with some flavorful cooking liquid.

Unsweetened Concord grape juice

An accessible substitute for wild-grape liquid in the home version of grape dumplings.

Use special ingredients carefully

Do not use fireplace, barbecue or unknown wood ash in food. Traditional culinary-ash practices are specific and knowledge-based. The Fringe Table piki page deliberately avoids reproducing the traditional bare-hand hot-stone technique.
